Wild Fermentation — Friday 1:00 PM

With Julian Scanlon. Explore fermentation techniques using seasonal and foraged ingredients, diving into the microbial and cultural stories behind these ancient practices. Includes a tasting.

Julian Scanlon is a naturalist, educator, and co-founder of ECOLOGICA (New Mexico). Born in Albuquerque and shaped by years in Italy, he blends cultural traditions, environmental stewardship, and hands-on learning in mushroom cultivation, fermentation, and community education.

Michael Connolly is an artisan chef, forager, and culinary innovator with 30+ years of experience, including executive chef roles at Adams Mountain Country Club, Cordillera Country Club, and Brightwater in the Vail Valley. He is founder of Red Canyon Spice LLC and a certified sommelier.

Mushroom Cultivation — Saturday 3:00 PM

With Michael Heim. Learn the basics of home cultivation and take home your own grow bag.

Michael Heim is a forager with 18 years in the field, a mushroom cultivator, and wild-food educator. Founder of Enso Farm and Forage (2015) and Mycolove Farm (2021).

Koji Extractions — Sunday 2:30 PM

Presented by Wade Fox. A 60-minute demonstration on mushroom koji extraction techniques. Learn both “the why and the how” behind completely alcohol-free extraction processes. Each extraction process is focused on efficacy, efficiency, and bio-viability.
